Michel Huard uses a blend of apples and pears, with pears making up at least 30% of the fruit content, as required by the AOC Calvados Domfrontais regulations. This results in a lighter, more floral spirit compared to other Calvados that use only apples.

The apples and pears are fermented into cider, which typically takes several months. No added sugars or artificial flavors are used, ensuring that the spirit retains its natural fruit character. The oak barrels impart rich flavors of vanilla, caramel, and spice while softening the natural acidity of the apples and pears.

Michel Huard Calvados is known for its bright and aromatic profile, with fresh and baked apple notes, complemented by the floral and light character of pears. You can also expect layers of vanilla, oak, and spices like cinnamon.

The palate is typically a harmonious blend of fruit and wood, with flavors of crisp apples, ripe pears, and gentle spices. As it ages, the Calvados develops more complex flavors such as dried fruits, toasted nuts, caramel, and sometimes a hint of leather or tobacco in the older expressions.
